Job Description
We are seeking an experienced and highly skilled Pastry Chef to take full responsibility for the daily Pastry & Bakery operation onboard a luxury cruise ship.
The successful candidate will lead the pastry team, participate actively in food preparation, maintain consistently high standards of desserts and pastries, control department costs and ensure strict compliance with food-safety, sanitation and company standards.
The Pastry Chef will report directly to the Executive Chef and supervise Chef de Partie Pastry / Commis Chefs.
Key Responsibilities
- Take full responsibility for the daily Pastry & Bakery operation.
- Actively participate in preparation and production of desserts, pastries and bakery products.
- Ensure all products are consistently prepared to the highest quality standards.
- Supervise, guide and motivate Pastry & Bakery staff.
- Organize daily production according to menus and guest requirements.
- Forecast and requisition pastry and bakery ingredients and supplies.
- Monitor inventory, stock levels and product usage.
- Ensure all pastry personnel comply with HACCP, Health and Sanitation regulations and Port Health Authority requirements.
- Maintain the highest standards of cleanliness and hygiene within the Pastry & Bakery areas.
- Ensure all pastry and bakery equipment is properly maintained and safely operated.
- Report maintenance issues promptly and follow up on work orders.
- Ensure department staff are kept informed of relevant shipboard information.
- Handle guest comments and complaints professionally and efficiently.
- Assist with stores loading and other operational duties when required.
- Provide a consistently high level of guest service.
Financial Responsibilities
- Assist the Executive Chef with control of food and operating costs.
- Monitor and control the use of consumables within the Pastry & Bakery Department.
- Monitor and control overtime for pastry staff.
- Maintain product quality while operating within established cost standards.
- Ensure company property and equipment are maintained and treated with care.
Safety Responsibilities
- Ensure correct use of Personal Protective Equipment (PPE) throughout the Pastry & Bakery Department.
- Ensure safe lifting techniques are practiced at all times.
- Train newly hired pastry staff in the safe and proper use of galley equipment.
- Ensure safe handling and operation of all pastry and bakery machinery.
- Perform in-port manning duties as scheduled.
- Follow emergency procedures and instructions on the vessel Safety Card.
- Participate in guest and crew emergency drills.
- Maintain full compliance with company safety policies and procedures.
Team Leadership & Training
- Introduce new staff to departmental duties and procedures.
- Provide continuous on-the-job training and coaching.
- Maintain ongoing training in international pastry techniques.
- Develop the skills and knowledge of Pastry & Bakery personnel.
- Identify and develop crew members with supervisory potential.
- Promote excellent communication and teamwork within the department.
- Communicate regularly with the Executive Chef.
- Provide coaching, counselling and performance guidance as required.
Requirements
- Culinary Institute Diploma or apprenticeship as a Pâtissier – mandatory.
- Minimum 3 years of experience in a luxury food operation as an Assistant Pastry Chef, or preferably 2 years of experience onboard a luxury cruise ship in the relevant position.
- Strong knowledge of culinary arts, pastry production and fine dining.
- Very strong background in international cuisine and cooking techniques.
- Excellent knowledge of pastry and bakery production.
- Highly motivated, energetic and flexible.
- Very good spoken English, with a minimum score of 70% in the onboard English proficiency test.
- Excellent communication and interpersonal skills.
