Job Description:
OSM Thome Recruitment is seeking a talented and organized Chef De Partie – Pastry to lead daily pastry galley operations onboard Royal Caribbean Group vessels worldwide. The role focuses on high-quality dessert production, team supervision, cost control, and full compliance with health and safety standards, including USPH and HACCP.
Key Responsibilities:
- Oversee daily pastry galley operations to ensure efficient production aligned with company standards
- Supervise, coach, train, and evaluate pastry team members together with the Assistant Pastry Chef
- Ensure quality, consistency, and presentation of all pastry and dessert items across the vessel
- Prepare production forecasts, control waste, and achieve food cost targets
- Supervise dessert displays and buffet presentations
- Ensure full USPH and HACCP compliance at all times
- Maintain sanitation standards and cleaning schedules after each service
- Prepare for announced and unannounced inspections
- Coordinate requisitioning and transportation of supplies from main stores
- Ensure recipes and yields meet corporate culinary standards
- Complete daily consumption recaps and operational reports
- Monitor punctuality, grooming, hygiene, and uniform standards
- Maintain timekeeping, scheduling, and documentation according to crew contracts
- Support guest and crew inquiries following shipboard procedures
- Attend all required meetings, trainings, and work-related activities
- Review timesheets and submit them to the Executive Sous Chef Pastry & Bakery
- Conduct spot checks of workstations and storage procedures
- Perform additional duties as assigned in support of galley operations
Requirements:
- Culinary degree from an accredited institution
- Minimum 2 years’ experience as Chef De Partie (Pastry) in an upscale hotel, resort, cruise ship, or high-volume banquet environment (shipboard experience preferred)
- Proven leadership skills in a multicultural, fast-paced kitchen
- Strong communication, decision-making, and problem-solving skills
- Excellent customer service mindset and team-building abilities
- Solid understanding of guest service standards and quality control
- Intermediate computer skills and basic accounting knowledge
- Ability to write reports and professional correspondence
- Fluency in English (spoken and written)
