Job Description:
Carnival Cruise Line is looking for dedicated individuals to join our culinary team as a Chef de Partie — Patisserie (Pastry) aboard one of our fantastic vessels. Our guests love to eat, and with all the amazing food on board, who can blame them! As Chef de Partie (CDP), you will be responsible for supporting the Executive Chef and the rest of the Galley Management team by overseeing the activities of food preparation and meal services aboard the ship within your assigned area. You will ensure that the highest levels of quality, consistency, and sanitation are maintained in keeping with company and USPH standards.

Key Responsibilities:
As per company policy, the main duties may include but are not limited to:
- Assisting and ensuring the efficient operation of the department by administration, planning, and analyzing day-to-day operations together with the Pastry Chef
- Maintaining company standards of food presentation and service
- Assisting and directing the team of pâtissiers
- Assisting and monitoring the quality of food taste and presentation
- Assisting the Pastry Chef in making food delivery requisitions (to be approved by the Chef) and ensuring all non-prepared food items are returned to the storeroom daily
- Monitoring and maintaining food cost within budget by keeping records of usage, controlling wastage and portion control, and reviewing consumption daily
- Inspecting products to ensure company specifications are maintained and reporting discrepancies to the Pastry Chef
- Establishing and maintaining training programs, as well as maintaining budgeted manning levels
- Monitoring personnel for hygiene and uniform standards
- Making recommendations to the Pastry Chef on the progress and performance of the team
- Completing nightly check-offs of the assigned area to ensure USPH and HACCP standards are maintained
- Setting special projects and target levels and monitoring their achievement
- Making work schedules and ensuring optimum productivity is achieved

Requirements:
- Valid STCW certificates
- Medical fitness certificate (Seafarers Medical Fitness Examination)
- Proficiency in English communication (conversational)
- Minimum 5 years of experience in similar roles
- Guest facing experience (minimum guest interaction might be required)
- Physically fit
- "Can-do" attitude with focus on continuous improvement
- At least 21 years of age
