Job Description:
OSM Thome Recruitment is seeking a skilled Baker to oversee daily bakery operations onboard Royal Caribbean Group vessels worldwide. The role involves high-quality bread and bakery production across multiple venues, ensuring consistency, hygiene, presentation, and full compliance with corporate and public health standards in a fast-paced, multicultural environment.
Key Responsibilities:
- Ensure smooth and efficient bakery operations, including daily production, buffet setup, and displays
- Maintain quality, taste, and presentation of all bakery items according to company standards
- Supervise, coach, and evaluate bakery team members in coordination with the Head Baker
- Prepare production forecasts, monitor usage, record leftovers, and reduce waste to meet food cost targets
- Ensure full compliance with USPH regulations and sanitation procedures
- Maintain readiness for announced and unannounced inspections; enforce daily cleaning schedules
- Requisition and coordinate delivery of ingredients and supplies from main stores
- Ensure correct recipe usage, portion control, and adherence to yield guidelines
- Complete daily consumption recaps and production reports
- Monitor punctuality, appearance, hygiene, and grooming standards of bakery staff
- Maintain knowledge of timekeeping, scheduling, and crew contract documentation
- Attend required meetings, trainings, and work-related activities
- Conduct spot checks for correct storage, labeling, and FIFO stock rotation
- Identify cost-saving opportunities and operational efficiencies
- Review timesheets and submit them to the Executive Chef; prepare reports as required
- Support shipboard operations and respond to guest or crew inquiries professionally
Requirements:
- Minimum 2 years’ experience as CDP Baker in an upscale hotel, resort, cruise ship, or high-volume environment (shipboard experience preferred)
- Culinary degree or accredited formal training required
- Strong leadership and team management skills
- Excellent communication, problem-solving, and decision-making abilities
- Strong team-building and conflict-resolution skills
- Solid understanding of food service processes, guest satisfaction, and quality assurance
- Ability to plan, organize, staff, coach, and evaluate team performance
- Intermediate computer literacy and reporting skills
- Basic accounting knowledge (inventory, debits/credits, cost adjustments)
- Fluent in spoken and written English
